This thing...what a great idea! I was making a special cake for a special birthday, and I wanted the layers to be even. I baked four layers, de-panned them, and let them cool completely in the fridge for an hour (as recommended to me). I actually baked enough layers for two cakes, just in case I had a horrible accident while leveling and needed to start over. 

When the moment came to level, I approached the cake with some trepidation, but I needn't have worried. The leveler sliced easily through each layer, with no tearing and no crumbling, and gave me perfectly flat tops. I ended up with two nearly perfect cakes. The trick is to be firm, but not rushed. "Since I started cooking sous vide, my family says my cooking has gone to a new level. I started with the original Anova, and just recently picked up this Nano. The Nano is awesome because it's much smaller compared to the first Anova, making it easier to store in a drawer.
